Drain the tofu and cut a thin layer off the 2 larger sides to remove the leathery smoked layer. Then cut in half lengthwise to make 2 equally thick pieces (about ½” thick each), making 4 pieces total from the 2 packages. Place it on paper towels or a clean towel, fold over, and press gently with your hands to remove some of the moisture.
Pour ¼ cup + 2 Tbs of Mother Raw Smoky Chipotle Dressing onto a shallow plate. Place each tofu slice into mixture and cover it with sauce.
Preheat waffle iron to max setting. Once hot, place each tofu slice onto iron, close the iron and cook for 4-6 minutes.
Remove tofu from waffle iron, drizzle with additional dressing, and serve with avocado and pico de gallo or diced tomatoes.
