Recipe Chickpea Salad Sandwhich

Plant-based chickpea salad in under 5 minutes! Place your chickpea salad on a sprouted or grain free bun, or enjoy on it's own. This plant based alternative is super easy, creamy, & full of protein. We recommend drizzling extra Mother Raw Ranch Dip on top!

Ingredients: 

  • 1 15 oz Can of Chickpeas 
  • 1 tsp Dijon Mustard
  • ¼ C Mother Raw Ranch Dip
  • 1/8 Red onion, diced and finely chopped
  • ¼ cucumber, diced
  • Dill to taste
  • Salt and Pepper to taste
  • Sprouted Wheat / Gluten Free Buns
  • Sliced Avocado
  • Arugula

Method: 

Drain and rinse chickpeas. Place in a large mixing bowl and mash with a fork. Pro tip - tilt the bowl when mashing and use some muscles! You can also pulse a few times in a food processor. 

Add Mother Raw Ranch to the bowl of mashed chickpeas. Mix well to evenly coat everything. Add in dijon mustard and mix again. Season with salt,  pepper and fresh dill to taste.  

Finely chop red onion and cucumber. Add to the bowl and mix well. 

Scoop chickpea salad onto your bun and add avocado slices and even more ranch dip! Serve with arugula or any greens you love.
