Another great way to dress up your toast, try out this Italian Smashed Chickpea recipe featuring Mother Raw Italian Dressing!
Ingredients
1 15 oz can Chickpeas, drained and rinsed½ Red Onion, small, finely chopped
1 clove Garlic, minced
¼ cup Mother Raw Italian Dressing
¼ cup Parsley, chopped
⅓ cup Kalamata Olives, chopped
½ tsp Oregano, dried
¼ tsp Kosher Salt
Chili Flakes, to taste (optional)
4 slices Sourdough, toasted
1 tsp Nutritional Yeast (for topping, optional)
Flaky Salt (for topping, optional)
Method
- In a large bowl, add the chickpeas and mash with a fork, or potato masher, until most of the chickpeas are smashed, leaving some whole.
- Add the remaining ingredients, except for the bread and mix well to combine.
- Divide the chickpea mixture onto the sourdough and top with nutritional yeast and flaky salt. Serve and enjoy!
