Stuff It

There are many festive foods to enjoy during the holiday season, but it’s not always easy to find plant-based alternatives. If you’re on a mission to eat more plants, you may already have a vegan stuffing recipe you love. Or maybe you’ve forgone stuffing all together in your quest to steer clear of meat. Well, we’re here to remind you that a turkey isn’t the only thing you can stuff this season! Take a look at these creative takes on the “stuffing” tradition.

Mushrooms

Mushrooms are packed with antioxidants, B vitamins, fiber, and potassium (source). Plus, this simple dish is so good it might steal the show this holiday. Stuffed portobello mushrooms are easy to make, delicious, and super versatile. Check out these three ways to make them, or try your own concoction!

Peppers

Mix it up this year by adding a new cuisine to your holiday spread. Try these Italian-inspired stuffed peppers which are sure to become a year-round favorite. There are so many yummy ways to stuff bell peppers - let us know your favorite!

Squash

The squash family was practically made for stuffing. From butternut to acorn to spaghetti squash, there are endless ways to fill this veggie with even more awesomeness. This quinoa-stuffed acorn squash is a wintery dish that looks (almost) as good as it tastes.

Sweet Potato

Potatoes in all forms are always a holiday favourite. Swap out your classic baked potato for this 6-ingredient stuffed sweet potato recipe that will definitely be remembered for years to come.

And More!

The possibilities for stuffed vegetables are endless. If you have a veggie at home, you can probably stuff it. Take a look at this recipe that’s basically a one-stop shop for stuffed tomatoes, peppers, zucchini, and eggplant! Try mixing in or drizzling a little Mother Raw Greek Dressing for extra flavor.

We love stuffed veggies because they’re so versatile. You can serve them as a main dish or side and there’s an option everyone will love. Have some leftover stuffing from your holiday meal? Hollow out your favorite veggie and toss that stuffing in! Think outside the box (or turkey!) and discover a new twist on an old favorite this holiday season.
