Recipe Stuffed Sweet Potatoes with BBQ Lentils

We put a healthy spin and vegan-ized the classic loaded baked potato by swapping in with sweet potatoes. Featuring Mother Raw Sweet Heat BBQ Sauce


2 Sweet Potatoes, poked with a fork a few times
½ cup French Lentils, cooked
¼ cup Mother Raw Sweet Heat BBQ Sauce
½ Avocado, cubed
1 Green Onion, sliced
½ Lime, for serving (optional)


  1. Preheat the oven to 425ºF (218ºC) and line a baking sheet with parchment paper. Add the sweet potatoes and bake for 40-50 minutes, until cooked through. 
  2. In a small bowl, add the lentils and the BBQ sauce and toss well. 
  3. Remove the sweet potatoes and cut down the middle. Add the lentils, and top with avocado and green onion. Squeeze some lime juice on top and serve alongside lime wedges. Enjoy!
