This recipe is a fiesta! Featuring Mother Raw Vegan Queso for a truly satisfying bowl.
Ingredients
1 cup Raw Walnuts1 tbsp Tamari
½ tsp Cumin, ground
¼ tsp Smoked Paprika
1 tsp Extra Virgin Olive Oil
1 head Romaine Lettuce, chopped
1 cup Chopped Cherry Tomatoes
1 Jalapeño, sliced
¼ cup Cilantro, chopped
1 Avocado, sliced
2 tbsp Extra Virgin Olive Oil
1 tbsp Lime Juice
Sea Salt and Pepper, to taste
¼ cup Mother Raw Vegan Queso
Method
- In a food processor or blender, pulse the walnuts with the tamari, cumin, smoked paprika and extra virgin olive oil. Pulse until the mixture comes together, but is still chunky.
- Place the chopped romaine in a large bowl, top with tomatoes, jalapeño, cilantro and avocado.
- Whisk together the olive oil and lime juice in a small bowl and then drizzle on top of the salad.
- Drizzle the queso on top. Serve and enjoy!
