Recipe Spicy Queso Scramble

We're kicking your basic tofu scramble up a notch by adding Mother Raw Spicy Queso. We've got tofu scramble down to a science & we want to share our delicious cheezy, spicy recipe. Serve with toast, waffles, or crepes, and of course a side of avocado! Tip: if you're making your own waffle or crepe batter add in a few tbsp of Mother Raw Ranch Dressing for a boost of savoury herbs. If you don't like spice, use our classic Queso instead!

 

Ingredients: 

  • 1 package of Organic Firm Tofu
  • 3 tbsp plant milk (we recommend almond!)
  • 3 tbsp olive or avocado oil
  • 3 tbsp chopped white onion
  • 1/2 a sliced red pepper
  • 2 tbsp Mother Raw Spicy Queso
  • 1 tsp Tumeric powder
  • 2 tsp Garlic powder
  • A pinch of salt and a pinch of pepper
  • Green onion or chives for garnish

Method: 

With your hands, crumble your tofu into small pieces and set aside. Add 2 tbsp of oil to your pan and add your chopped white onion. Cook until translucent. Next, add another tbsp of oil onto the pan then add your red pepper. Cook until soft. Once your veggies are cooked, add your crumbled tofu onto the pan. Stir until combined. Add 3 tbsp of plant milk to the mixture, then stir in your your garlic & tumeric powder.

Next add in your Mother Raw Spicy Queso, and cook for another 3-5 minutes on low heat. Serve with salt & pepper to taste, and garnish with green onion or chives! Smoother more queso on top for some extra cheezy goodness.
