Crank up your plant game with this epic bowl of cauliflower rice! The tastes of the mediterranean are perfectly paired with juicy tomatoes and protein-packed chickpeas.


● 1 package Cece Veggie Co’s Organic Cauliflower Rice
● 3/4 cup Mother Raw Mediterranean Dressing
● 1 small onion, chopped
● 1 cup canned chickpeas, shells removed
● 1⁄2 cup cherry tomatoes, sliced in half
● 1/4 tsp salt
● 1 tbsp extra virgin olive oil
● 1 small lemon, sliced
● 1 tbsp rosemary, chopped


1. Heat a pan with 1 tbsp olive oil over medium heat.
2. Once the pan is hot, add in onions. Stir until fragrant.
3. Add in cauliflower rice and salt. Let cook for 6 minutes until soft, stirring occasionally.
4. Add in chickpeas and tomatoes, and let it cook for 2-3 minutes.
5. Add dressing into pan and combine thoroughly. Let it sit in pan for 1-2 minutes.
6. Remove from heat. Add more dressing if desired at this point. Top with sliced lemons
and rosemary.
