Italian inspired tofu scramble with lots of veggies and all the seasoning coming from the Italian Dressing! If you don’t have spinach or red pepper on hand, use whatever additional veggies you have! Add additional Mother Raw Italian Dressing for even more flavour.
Lay out a few dish towels layered on top of one another. Break the tofu into bite size pieces over top and blot with towels. Allow to dry as you prepare the veggies.
Finely chop onion, core and slice red pepper.
In a large skillet warm the oil over medium low heat. Add onion and red pepper and cook until just tender, about 5 minutes.
Add the crumbled tofu. Stir for 2 minutes and then add Italian Dressing. Add more if you want more flavour. Stir for 5-7 more minutes then add the spinach and stir until its just wilted.
Serve hot with some toast or with potatoes, and sprinkled with microgreens if desired. Enjoy!
