Easy Baked Falafel

These easy baked falafel balls are the perfect protein rich addition to your lunch or dinner. Just throw these inside of a pita, on a salad, or on a bed of rice. Then, pour on some Mother Raw Mediterranean dressing to add a punch of those classic flavors of kalamata olive, sun dried tomato, and oregano. You'll thank us for this one later!

Ingredients: 

  • 1 can of chickpeas (rinsed & drained)
  • 1 cup of fresh parsley
  • 1/4 cup walnuts
  • 1/2 cup fresh cilantro
  • 1/4 cup red onion
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1/4 tsp turmeric powder

Method: 

Combine all of the ingredients in a food processor until incorporated. Place falafel batter in a bowl, and put in the fridge to firm for about 20 mins. After 20 mins, roll into 1 inch balls (you'll end up with about 16). Place the balls on a parchment paper lined baking dish sprayed with oil of choice. Spray the tops of the falafel balls with oil as well. Bake at 400 for 30 min, flipping half way. Serve with Mother Raw Mediterranean dressing and enjoy!
