Impress your guests with comfort food disguised as a beautiful cheezy plant based risotto. The perfect main or side dish that is creamy, delicious, and dairy & gluten free! There's also tons of greens packed into this cheezy dish. You will thank us later!
Ingredients
- 1 cup short grain brown rice
- 1/2 cup frozen peas
- 1/4 cup chopped white onion
- 2 cloves garlic
- 1 cup spinach
- 3 tbsp Mother Raw Queso
- 3 tbsp cup olive oil
- 2 cups low sodium vegetable broth
- 2 cups water
- Green onion for garnish
- Sprouts for garnish (we recommend broccoli sprouts or pea shoots!)
- Sea salt and pepper to taste!
Method:
Add 2 tbsp olive oil to your pan on high heat then add your chopped white onion. Sauté until translucent then add your 2 cloves of minced garlic. Add another tbsp of olive oil to your pan then add your rice. Mix your rice around in the pan so that the grains are lightly coated with oil. Add one cup of vegetable broth, or enough to cover the rice completely. Stir frequently and keep adding your broth when the rice becomes dry. Once your 2 cups of broth are done, add your peas and spinach into the mixture. Now switch to using water as your liquid! Add 1/2 cup of water at a time until rice becomes soft and no more liquid is needed.
Before serving, mix in 3 tbsp of Mother Raw Queso. Add salt and pepper. Garnish with green onion and sprouts of your choice!
