Think the only thing you can do with leftover stuffing is make gravy and stuffing sandwiches? We are here to prove you wrong! Turn your leftover vegan stuffing into muffins (yes, muffins!). Top them with some Mother Raw Original BBQ Sauce to help moisten them and provide a kick of flavor and BOOM you have snack sized version of your favorite dish. 

Ingredients

4 to 5 cups leftover vegan stuffing, cooked 

1 tbsp ground flax seeds

3 tbsp water

⅓ cup  Mother Raw Original BBQ Sauce

Directions

Preheat the oven to 400ºF and grease a muffin tin.

Add the vegan stuffing into a large bowl.

In a small bowl, add the ground flax seeds and water and let it sit and gel for about four to five minutes. 

Pour the flax egg into the bowl with the stuffing and mix to combine.

Divide the stuffing into the prepared muffin tin, filling all the way up. Place in the oven to cook for 16 to 18 minutes, until crispy on top.

Let cool for about ten minutes before removing. 

When ready to eat, top with  Mother Raw Original BBQ Sauce. This dish is sure to strike up some conversation. Bring it to your next brunch, it's a great way to use leftovers and to try something new!
