We
are seeing seitan everywhere these days so naturally we had to see what
all the hype was about. Then we started to get thinking- is there
anything better than BBQ sauce with your vegan chicken? So we found a
way to incorporate both.When you’re craving something hearty and saucy, make these seitan boneless BBQ chicken bites. Tossed in Mother Raw Sweet Heat BBQ Sauce, these have some serious kick!
In a large bowl, add the wheat gluten, garlic powder and salt and whisk to combine. Slowly add in about half the vegetable broth and start to stir. Add in the remaining broth and keep stirring.
Once the dough gets hard to stir, knead with your hands to mix everything together into one big ball.
Break the dough into small pieces and add to the water and boil for 30 minutes, stirring occasionally.
Drain the seitan pieces and let them cool.
Preheat the oven to 400ºF and line a baking sheet with parchment paper.
Use your hands to squeeze out as much water as possible from the seitan pieces and place on the prepared baking sheet. Once all are done and on the baking sheet, spray with avocado oil.
Bake for 15 minutes, then remove from the oven and flip the pieces over and spray again with oil. Bake for another 20 minutes, until browned and firmer to the touch.
