Ingredients 1/2 cup diced yellow onion 1 yellow bell pepper chopped 1 red bell pepper chopped 1 x 15 oz can of black beans 1 x 15 oz can of white beans1 x 14 oz can of diced tomatoes (unsalted)1 cup water1 cup veggie broth7 oz of tomato sauce1⁄2 cup Mother Raw Organic Ketchup1⁄2 cup uncooked quinoa1.5 tsp chili powder1⁄2 tsp smoked paprika1⁄2 tsp cumin1 tsp salt Toppings: avocado, cilantro, chopped red onion, tortilla chips Method Add all ingredients into a pot and bring to a boil. Once boiling, cover and simmer on low/medium for 25 minutes, stirring halfway through. Garnish with optional toppings. Serve warm and enjoy!
