Ingredients

1/2 cup diced yellow onion
1 yellow bell pepper chopped
1 red bell pepper chopped
1 x 15 oz can of black beans
1 x 15 oz can of white beans
1 x 14 oz can of diced tomatoes (unsalted)
1 cup water
1 cup veggie broth
7 oz of tomato sauce
1⁄2 cup Mother Raw Organic Ketchup
1⁄2 cup uncooked quinoa
1.5 tsp chili powder
1⁄2 tsp smoked paprika
1⁄2 tsp cumin
1 tsp salt

Toppings: avocado, cilantro, chopped red onion, tortilla chips

Method

  1. Add all ingredients into a pot and bring to a boil.
  2. Once boiling, cover and simmer on low/medium for 25 minutes, stirring halfway through.
  3. Garnish with optional toppings.
  4. Serve warm and enjoy!
