We showed you how to make pulled jackfruit tacos, and now were sharing our delicious BBQ Jackfruit bowl. You can even make some extra jackfruit and save for other recipes! This bowl is full of fresh veggies and topped with a hearty yet light BBQ jackfruit. Mother Raw Sweet Heat BBQ adds the perfect amount of spice!
Ingredients:
For the BBQ Jackfruit:
- 1 Can Jackfruit (in Brine)
- Cooking Spray (Avocado Oil)
- ½ C Mother Raw BBQ Sauce
- ½ tsp Paprika
- Sea Salt to taste
For Fiesta Bowl:
- ½ Can Blackbeans, Drained and rinsed
- ½ C Grape Tomatoes, halved
- ½ C Corn Salsa or Store Bought Salsa of your choice
- 1 Avocado
- Mother Raw Ranch Dressing (to drizzle)
- Arugula / Spinach as base
Method:
Drain jackfruit from can and drain. Layout chunks on a towel and pat dry. “Shred” the jackfruit with a fork or if you don’t mind getting messy, you can use your hands. It pulls apart super easily.
Evenly spray a sauce pan with avocado oil and heat on medium. Add jackfruit into the pan when hot. Mix with a spatula. You can use a spatula to break up the jackfruit even more. Season with salt and paprika. Stir and then cook for 2 minutes.
Add in Mother Raw Sweet Heat BBQ sauce to the pan and mix to evenly coat the jackfruit. Reduce heat to low and let cook for 10-15 minutes.
While the jackfruit is cooking, prepare the base of your bowls. Drain and rinse the black beans. Chop the grape tomatoes. Slice avocado. Set aside the corn salsa.
Build your bowl from the bottom up. Start with greens, add blackbeans, salsa and then tomatoes and avocados.
When the jackfruit is finished, toss it into the bowls! Drizzle with Mother Raw Ranch Dressing. Enjoy!
